Pink Frosted Brownies

Purchase brownie bites at Costco. Frost with the following:

Paula's Pink Peppermint Frosting

This is a recipe our family developed when our sons were small--thirty years later we're still enjoying it and sharing it with you!

Cream 2 sticks softened butter. Gradually add 1 pound powdered sugar. Add 1 tsp. vanilla extract, 1/2 tsp oil of peppermint and 2-3 drops red food coloring. Mix in up to 3 T. half and half until creamy...you may need a little more or a little less.  Spread on brownies.  Makes enough to frost 24 cupcakes . I cut the recipe in half to frost 24 small brownie bites..
